Benzoic acid is white flake ,it's a bit of benzoic or benzyl aldehyde flavour. which begins to sublimate at 100ºC, is hard to dissolve in water but dissolvable in boiling water, alcohol, chloroform and ether, and steady in the air.

[3] Mainly used as a food preservative,1g/kg used in soy sauce, vinegar, fruit juice, jam, fruit syrup, can; 0.8g/kg used in grape wine, fruit wine and soft agarose; 0.4g/kg used in fruit soda water; 0.5g/kg used in low-salt paste, flour paste, candied fruit, haw jelly cake and fruit syrup; 2g/kg used in condensed fruit juice.
